Puffins Cereal is one of my favorite breakfast cereals. It is healthy, crunchy, sweet and great by itself or with milk. I figured that if Puffins were great by themselves, they would be perfect in some waffles. I stuffed as much puffins as I could in my small Cuisinart food processor and ground them up (which yielded 1 cup of ground puffin).My whole family ate them up so I knew they passed the test.
Kid Friendly Tips: Have your child help you add the puffins to the food processor (careful of the blade so I would help them). Have your child mix the ingredients all together. The waffle maker gets super hot so I don’t allow my children to get too close to that but they can certainly test taste the first waffle! Have your child choose their favorite puffin cereal and try that in the recipe.
Language Concepts: Discuss the shape and taste of the puffin. Try different types of puffins and discuss the similarities and differences. Discuss the different shapes of the waffle. Have fun counting how many squares are in the waffles. Ask your child to recall information by asking, “What ingredients did we use?” and/or “Why do we add baking powder?” to get your child thinking and understanding different ingredients.
1 cup of whole wheat flour
1 cup of ground puffins (ground up puffins in food processor)
3 tablespoons of ground flaxseed
1/4 cup of light brown sugar
4 teaspooons of baking powder
1/2 teaspoon of cinnamon
dash of ground all spice
1/4 cup of canola oil
1/4 cup of applesauce
1 1/4 cup of low fat milk
1 teaspoon of vanilla extract
1. Mix whole wheat flour, ground puffins, ground flaxseed, sugar, baking powder and spices in one bowl.
4. In another bowl mix eggs, canola oil, applesauce, milk and vanilla.
3. Add wet to dry ingredents.
4. Get waffle maker ready. Add batter to waffle maker. Makes about 5-6 waffles.
