Want dessert for breakfast? I had some leftover mascarpone cheese in the fridge and decided to make a decadent breakfast one morning. Mascarpone cheese is such a wonderful ingredient because it can compliment desserts, sauces and much more. I often mix it in to my red sauce to make it creamy and delicious. With this recipe, I literally threw a bunch of ingredients together that I thought would compliment eachother. It resulted in a sweet, crunchy waffle with a faint chocolate taste. My kids ate these up in no time! If you don’t have a waffle iron, make these into pancakes. You can even serve these for dessert if you like.
Kid Friendly Tips: Kids can help with mixing and measuring. Discuss actions associated with the recipe including mixing, measure, whisking, folding, and pouring. Don’t forget eating! Discuss what mascarpone cheese is and let your little one taste it and describe the flavors.

1 cup of all purpose flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
3 tablespoons of sugar
2 tablespoons of cocoa
1/2 teaspoon of cinnamon
1 cup of low fat milk
1-2 heaping tablespoons of mascarpone cheese
2 tablespoons of melted butter
1 teaspoon of vanilla extract
1/4 cup of chocolate chip mini chips
1. Mix flour through cinnamon in one bowl. Whisk.
4. In another bowl mix milk through vanilla extract. Whisk.
3. Add wet to dry ingredients.
4. Fold in mini chips.
5. Get waffle maker ready. Add batter to waffle maker. Makes about 4-5 waffles.
6. Serve with warm maple syrup.
