Looking for a new vegan recipe? I have been experimenting lately with my vegan recipes. Since so many people out there have so many different diets and allergies, I think its important to share some recipes that can be easily modified for your taste or diet. The muffins are sweet and moist with a nice cinnamon taste to them. I added some oil and applesauce to increase the moistness of the muffins. Make some mini muffins for a quick snack for the kids.
Kid Friendly Tips: Teach your child what “vegan” means. Use different milk that you have in the house such as vanilla soy milk or vanilla coconut milk. Your child can help mash the banana and add some fun spices of their own. Not on a vegan diet? Add an egg to the batter and substitute regular milk into the muffins.
1 cup of white whole wheat flour
1/2 teaspoon of cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1/4 cup of applesauce
1 cup of vanilla almond milk
1/4 cup of pure maple syrup
2 tablespoons canola oil
1 mashed banana
1 teaspoon of vanilla extract
1. Combine flour through salt in a bowl. Mix with a whisk.
2. In another separate bowl combine applesauce, almond milk, syrup, oil and the mashed banana. Add to batter until moistened. Add vanilla extract to batter.
3. Pour batter into greased muffin tins. Bake at 350 for about 12-15 or until done. Yield 6 muffins or so.
4. Let cool and eat!
