Are you vegan? Is your child vegan? Ran out of eggs? In either case, you would love these chocolate vegan muffins if you are craving something sweet with a hint of chocolate. These are similar to my vegan pancakes but I adjusted the recipe to make muffins. The recipe only yields 6 muffins but feel free to double for a dozen muffins. The muffins are surprisingly moist and have a nice texture.
Kid Friendly Tips: Have your child help pour and measure the ingredients. Your child can help mash up the banana and mix it into the batter. With no eggs, there is no worry about tasting raw batter! Discuss what “vegan” means. Focus on the sequencing of the activity. Ask your child how you made the recipe (review the steps). Take some photos and video of you and your little one making the recipe together. Soon I will have some reviews of apps that can be used to review the recipe and make a story!
1/2 cup white flour
1/2 cup of white whole wheat flour
2 tablespoons of unsweetened cocoa
1/3 cup raw sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chocolate soy milk
2 tablespoons canola oil
1 mashed banana
1/3 cup of mini dairy free chips (optional)
1. Combine flour through salt in a bowl. Mix with a whisk.
2. In another separate bowl combine milk, oil and the mashed banana. Add to batter until moistened.
3. Fold in some mini chips if you like or just keep the way it is.
4. Pour batter into greased muffin tins. Bake at 350 for about 12-15 or until done. Yield 6 muffins or so.
5. Let cool and eat!
