I have been experimenting lately with the toasted soy spread. I am fascinated by the fact that I can’t tell the difference between that spread and peanut butter. I was in the mood the other day to make a hearty oatmeal bread. I decided to make this bread and its sweet and satisfying. Its great by itself or toasted with jelly (for a PB & J feel) or biscoff spread. Enjoy!
1.5 cups of white flour
1 tablespoon of baking powder
1/2 teaspoon of salt
1/4 cup of raw sugar or regular white sugar
1/2 cup of light brown sugar
1 cup of quick cooking oats
3/4 cup of smooth toasted soy spread
1/2 cup of chocolate chips
1 cup of lowfat milk (or regular milk)
2 teaspoons of vanilla extract
1 beaten egg
1 mashed banana
1. In one bowl mix flour, baking powder, sugars and salt. Whisk together to incorporate all ingredients.
2. With a hand mixer, add toasted soy spread. Then add oats, milk, vanilla, banana and egg. Mix until incorporated.
3. Fold in chocolate chips.
4. Add to a greased loaf pan.
4. Bake at 350 for 50-60 minutes depending on your oven.
