Have extra strawberries and yogurt in the fridge? Try these strawberry yogurt waffles. These waffles are also a great way to add some extra fruit into your child’s diet. The waffles can easily be made into pancakes if you don’t have a waffle iron. They are also really healthy because they are made with white whole wheat flour, wheat germ, yogurt, milk and fruit. Want to make them dairy free? The yogurt can easily be substituted with coconut milk yogurt and the milk can be substituted for soy, almond or coconut milk. Don’t like strawberries? Use a different fruit such as cherries or peach.
Kid Friendly Tips: Have your child help puree the ingredients together in the blender. Let them choose what fruits they would like in the waffles. They can help measure, mix and pick their topping. The waffles can be topped with fruit, jam, or maple syrup.
Carryover Book: Waffles and Pancakes
1 cup of white whole wheat flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/3 cup of light brown sugar
1/4 teaspoon of table salt
3 tablespoons of wheat germ
ground all spice
1/4 cup of low fat milk
1/4 cup of vanilla yogurt (can be substituted with plain if you want to lessen sugar)
1 cup of sliced strawberries + 1/4 cup of sliced strawberries, chopped
1/2 ripe banana
1 teaspoon of vanilla extract
1. In the bowl, combine flour through all spice.
2. In the blender combine egg, milk, yogurt, 1 cup of strawberries, banana and vanilla. Reserve 1/4 cup of stawberries and keep on the side.
3. Blend until smooth.
4. Add wet ingredients to dry ingredients.
5. Fold strawberries into the batter.
6. Let batter sit for about 15 minutes at room temperature.
