Irish Soda Bread

What could be better on a cold winter morning than warm, sweet Irish Soda Bread? This bread is moist, full of raisins, and perfect by itself or toasted with cinnamon butter or homemade jam. After many searches for the perfect recipe for Irish Soda Bread I found it here at allrecipes.com. I modified it slightly by substituting low fat ingredients and omitting the caraway seeds. I also added a teaspoon of vanilla extract to the batter. The bread comes out of the oven warm and absolutely amazing. It’s excellent right out of the oven and even after a couple of days.
